Lentil Salad

This lovely vegan salad is one of my latest creations. I am such a big fan of beets and fennel that I decided to mix them with French lentils to create this delicious summery salad.
Level: Easy Serves: 2-3
What you need:
• 2 cups of greens of your choice
• ½ cup of French lentils
• ½ cup of sliced beets
• ½ cup of sliced fennel
• ½ cup of sliced carrots
• 3 tablespoons of olive oil
• 1 teaspoon of apple cider vinegar
• 1 table of Dijon mustard
How to make it:
Dressing: In a soup bowl mix the mustard, olive oil, vinegar, salt and pepper to taste. Whisk with a fork until creamy and leave aside.
Salad: Cook the lentils in a pot with water, a garlic clove and a bit of salt for 25-30 minutes. Taste them to make sure they are a bit firm as you do not want to overcook them. Drain the lentils and mix them up with the greens, fennel, carrots, beets and the dressing and serve!
Tip: You can add grilled or smoked salmon to this salad to make it even more delicious!
